Ingredients

1 wholemeal pita bread or pocket, large (100g) (or gluten free)

2 tbs (40g) tomato paste

34 cup (100g) mozzarella grated

12 red onion very thinly sliced

100g ham thinly sliced or shaved

50g kalamata olives halved

2 sprigs of fresh basil leaves picked

12 cup (15g) rocket

salt & pepper, to taste

Preheat oven and pizza tray to 220°C/fan 200°C/gas 7.

Spread tomato paste evenly over pita and top with mozzarella, onion, ham and olives.

Bake for 10-15 minutes until golden.

Top with basil leaves and rocket and season with salt and pepper to serve.
